So in the mid of exams, i decided to bake peach muffins for my fellow Koinonians...
I sorta decide after my....i wana quit psychology post...with me in the apron and all, that i should really start documenting my baking sprees, to see how well i improve...and to share my experiences with other baking enthusiast...
What i aim to do differently perhaps, is to give like simple tips along the way, something in which many recipes lack...leaving amateur bakers go...what? how? (note that i'm learning too, so feel free to correct me)
But i think the exam stress really got to me..and i forgot to take pics of the muffins i baked..all i have is this..the unbaked muffins
- 180 gm. unsalted butter - melted (remember, its unsalted!)
- 220 gm. fine sugar (If you don't have a sweet tooth, you can reduce the sugar, like i do! though sugar always helps in giving you that extra crisp on the outside)
- 1/4 tsp. salt
- 2 eggs - lightly beaten
- 250 gm. self raising flour
- 1 tsp. Baking powder
- 80 gm. ground almonds (this is essentially almond flour also known as almond meal)
- 1 small can of peach - cut into dice (If you are using the big can, the ones they typically sell in carrefour, tesco, giant, then half a can will do)
- 100 ml. fresh milk
- Bakes 15 muffins!
(1) Melt butter over stove, then add in sugar, salt, beaten eggs and milk and stir well.
(2) Add in sifted flour, ground almonds and baking powder. Stir lightly.
(2) Add in diced peaches.
(3) Spoon into muffin cups and bake at 180C for about 25 mins. or till cooked. Remember to use stiff muffin cups, alternatively use a muffin tray.
(4) Leave muffins to cool on cooling rack.
Lil chef baking tips
- Difficulty level: Easy (Everyone can bake...variation from Ratatouille's "everyone can cook")
- Preparation time: <45 minutes depending on how fast you sift flour and measure ingredients
- Tools: pan to melt butter, mixing bowl, wooden spoon, muffin tray/muffin cups, measuring cups, no electric mixer required!
- Cost: the ground almonds, peaches and unsalted butter are the more pricey of the lot, if you're on a budget, you can substitute the ground almonds with self raising flour!
- Tips: Over stirred muffin batter results in muffins that are dry and as hard as rock..muffin batter are meant to be lumpy, so remember, stir lightly, as long as all the flour are well mixed, STOP!
