Strawberry & Kiwi Cheese Tart


Its been awhile since i last posted recipes...this is like a rojak recipe..from different recipes..altered to make a fruit tart...i used cheese filling as opposed to the typical custard filling used for fruit tarts. It was a good first attempts....more oven surprises to come...if i can find the time..i am trying to try as many new recipes as possible =)

Filling:
250 g Cream cheese
80 g Icing sugar
80g unsalted butter
1 egg
1/2 lemon - squeeze out juice

Pastry:
350 g Plain Flour
100 g sugar
200 g salted butter
1/4 tsp salt
1 egg

Method:
Pastry
1. Cream butter, sugar and salt till creamy.
2. Add in egg and continue creaming.
3. Add in flour and mix into a dough. Cover with a cloth or cling wrap and chill in fridge for 20 mins.
4. Press pastry into tart molds

Blind Bake for about 10 mins at 175C depending on the size of your tart. Let it cool. (*note: it sorta works too, even if you don't blind bake it, another alternative is to place similar size moulds on top of each other, otherwise you just risk your pastry rising higher than you want it too!)

Filling
1. Cream the cream cheese with sugar till creamy. Add in butter and continue to cream.
2.  Add in egg and lemon juice and keep creaming.
3. Pour/Spoon mixture into baked tart moulds and bake for about 8 mins at 180C.
4. Chill in fridge and serve.




Typically one would glaze the fruits to preserve the colour a lil and make it look shiny...but i made this in a rush, and they sorta were gonna be in ppl's tummy within the next 3 hours...so i left out the glazing part =)
